Simple Meatloaf with Oatmeal

Simple meatloaf served with Sweet and Sour Coleslaw and baked potatoes.  

2 pounds hamburger- ground chicken or turkey work as well

½ cup diced onion

2-4 minced garlic cloves

1 cup oatmeal

1 cup tomato sauce or ketchup or salsa

2 eggs

1-2 tsp salt or 1-2 TBSP Braggs amino acids

1 TBSP Italian seasoning

½-1 tsp pepper

Mix all ingredients  in a large bowl and bake in a loaf pan, 8 muffin tins or miniature loaf pans or free form shape on a baking stone.   Bake at 350 for 30 minutes to an hour, depending on size of loaves.  Safe internal temp for ground beef is 160.  This recipe is quick and can easily be doubled or tripled to feed a crowd.
