Sweet and Sour Coleslaw

More than a few life long cabbage haters have gobbled down two or three heaps of this healthy, simple and flavorful salad.  Its a great side for almost any dish and cabbage is always on hand in our kitchen because it keeps so well.  I love to make it with purple cabbage for lots of color on the table.

8 cups finely chopped or shredded cabbage (a small head or half a large one)

2 shredded carrots

½ finely diced sweet onion or small bunch of green onions

½ cup apple cider vinegar

¼ cup olive oil

¼ cup sugar or honey

1 TBSP soy sauce or Braggs amino acids

1-2 tsp minced garlic

1 tsp minced ginger ( I blend it up with the vinegar because ginger is hard to mince as small as I want it to be)

optional additions: 1 diced apple, small bunch of chopped cilantro, 1 cup chopped craisins, ½ cup sunflower or pumpkin seeds or nuts

Chop/dice/grate and mix veggies and additions in large bowl

In a small bowl mix vinegar, oil, honey, garlic, ginger and soy sauce

Pour dressing over slaw mix right before serving
